You can reserve rooms on the Parador website - www parador es. There is an English version as come up as a booking page. All the available specials show up once you search for availability. Alternatively you can use a jaunt agent. Friends of ours used a travel agent for the Granada Parador in April. We used the website for our upcoming trip to Ronda in October.
